A.J. deLange has been homebrewing beer for over 30 years and fiddling with brewing water chemistry for about 25 years. Convinced early on in his brewing career that knowing some brewing science would help him make better beer, he thought he’d start with water. He never finished. He’s lectured everyone from homebrew clubs to brewers from the world’s largest breweries, presented workshops on brewing water and written articles for Brewing Techniques, The New Brewer, Cerevesia and the Journal of the ASBC. After all that, he’s pretty much convinced that a teaspoonful of calcium chloride in 5 gallons of RO water is all you really need most of the time. He’s a retired electrical engineer who lives with his wife Jane and two Leonberger dogs.
