Dick Cantwell has been brewing professionally in Seattle since 1990, and as a homebrewer for a couple of years before that in Cambridge, Mass. Seattle is a great place for finding the weird ingredients he favors. He co-founded Elysian Brewing Co. in 1996, published Barley Wine with Brewers Publications in 1997, and is the author of the recently released second edition of The Brewers Association’s Guide to Starting Your Own Brewery.
