Jeff Mello is the founder and chief yeast wrangler of Bootleg Biology LLC (bootlegbiology.com), an open-source yeast and wild bugs project whose goal is to create the most diverse library of brewing microbes captured from “bootleg” sources. Bootleg Biology is the first organization to pioneer the collection of official yeast strains for geographic areas as part of its Local Yeast Project, beginning with the original S. Arlingtonesis. Jeff Mello and Bootleg Biology were featured in the August 2013 issue of BeerAdvocate.
